Candied Nuts (nuts4nuts knockoff)

After visiting New York City with the family, I got to thinking about the candied nuts we bought in Central Park. It took some internet searching and watching interviews with the owner of Nuts4Nuts who was open with some of the basic core ingredients. I am sure it’s not spot on and is missing a lot but after making this batch I’ve been so very pleased.
Many recipes do not call for honey powder but I believe it makes for a terrific end product. I bought a big can off Amazon that will last me years for $10.
This recipe is easy to make with immediate cleanup (i suggest)
Ingredients
2 cups of your favorite nut, must be raw as any cooked nuts turn out too brittle
1 cups sugar
1 tbsp honey powder
1/2 cup water
1 tsp salt
1 tsp brown sugar
2 pinches cayenne
Directions:
Add nuts, water, sugar, and honey powder to stainless steel pan.
Medium high heat, stir often. You can take breaks stirring at first but when it starts to bubble and thicken you stir more often.
When it is very thick and starting to stick together you stir the fastest.
Scrape as much off the bottom of the pan while stirring to use all of the ingredients.
Pull off heat source and dump in salt, brown sugar, and cayenne. Mix quickly to get to spread and take up.
Lay out parchment paper and spread evenly.
When cooler (a few minutes) break up any large clusters.
Enjoy and serve.
