Grace’s Chicken Noodle Soup

This came from our friend and previous neighbor Grace. She keeps a very healthy diet and is a fantastic cook. Grace also happens to be a wonderful human being. She was kind enough to show us how to cook this. I have included her healthy cooking tips.
All ingredients should be organic:
1 whole chicken
1 bag egg noodles
3 onions
5 celery stalks
6 carrots
Small pack of frozen peas
Small pack of frozen string beans
Parsley
4 medium garlic cloves
½ cup Tomato sauce
All about 1/2 tsp:
Oregano
Bay leaves
Rosemary
Basil
Organic is best because the soup cooks long therefore, extracting everything from the ingredients.
Steps:
Clean and chop vegetables. GRACE’S TIP: scrub the skin and do not peel because most of the healthy stuff is in the skin.
Quarter (actually eighth) the chicken breaking at joints, Cover in water on high heat.
Mince garlic cloves into water
Add tomato sauce
Add all spices
When pot gets to a boil, turn down to simmer
My tip: Check temp of the chicken with thermometer, when it gets close to 165, pull chicken out and tear apart, removing skin. Place chicken back in pot.
Chop onions, celery, carrots and add GRADE’S TIP: chop the vegetables finely, they cook quickly
Mince good big handful parsley, add
Cook for aprox 30 minutes with all ingredients depending on thickness of vegetables. Carrots can be the longest and might be added early if you prefer.
25 minutes out add noodles (adjust time to the pasta you select and the directions on the bag)
10 minutes out add frozen peas and green beans
