Soak in water (tin tray) for at least 12 hours. Changed water 3-4 times, removes the salt. Pat dry & rub with olive oil. I don’t measure….RUB: Onion powder, garlic powder, paprika, dry yellow mustard, brown sugar, HEAVY on the coriander, HEAVY on black pepper. Season packet that it came with rub on last. Smoker to 230 temperature, Internal temperature to 203’. Took EXACTLY 7 hours.

Wrapped in tin foil & placed in cooler until ready to serve (2-3 hours later)
