Chicken Divan

This is a very easy recipe and hard to mess up. It is very tasty.
Ingredients:
4 to 6 chicken breasts cubed and cooked (shredded is fine as well)
Two packages of broccoli
2 cans cream of mushroom (cream of chicken also works depending on your taste)
Your preferred rice
2 cups shredded cheddar cheese
1/3 cup milk (heavier milks create thicker cream)
10 or so ritz crackers, broken into crumbs
1 tblsp mayo
1 tsp onion powder
1 tblsp butter, melted
salt and pepper to taste
Cook chicken thru, no need to brown
Partially cook the broccoli, if it’s frozen mostly thaw but not 100% cook (it’ll cook while baking)
In a rectangle casserole pan add broccoli then chicken
In separate bowl add soup, mayo, butter, onion powder, and S&P, mix well. Also add 1 and 1/2 cups cheddar cheese.
Mix together well, so liquid is spread thru.
On top add remaining cheese and then the cracker crumbs
In an over cook for 20 minutes at 400 degrees. check that it is heated thru as some casseroles take longer to heat thru
Serve over rice, with bread.
