Heidi’s Ginger Tzatziki Chicken

This is an internet sourced recipe that a wonderful relative Heidi shared. What do you get when you cross kindness with a Life & Health Coach? Well Heidi of course.
The recipe is delicious and quite healthy. I made small updates for my preferred taste and have highlighted my updates in *italic.
Ingredients:
2 pounds chicken breasts
1/2 cup soy sauce
2 teaspoons ginger powder
1 tablespoon olive oil
1/4 teaspoon pepper
*1+ tablespoon sesame sauce
For the Tzatziki:
1/4 cup finely diced cucumbers
1 clove minced garlic
1 teaspoon dried dill
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup plain Greek yogurt
For the wraps:
8 ounces Whole romaine lettuce leaves
1 3/4 cup sliced cucumber
*add sliced tomatoes
Directions:
In a bowl mix together the soy sauce, ginger, olive oil and pepper.
*I prefer to add sesame sauce to most recipes with soy sauce. It’s my personal preference and i encourage you to give it a try.
Add in the chicken and cover with plastic to marinate for 30 minutes.
In a small bowl, add your cucumbers, dill, garlic, salt, pepper and yogurt and mix it together.
*put in the fridge until just before serving for appealing presentation and consistency. Cold flavorful tzatziki on hot cooked chicken is a treat!!
Grill your chicken. *I prefer to pan fry this one, solid cooking crust throughout both sides so the diced chicken has more flavor.
When it’s done, assemble your wraps by lining the romaine leaves with cucumber, then add a few pieces of chicken and top with the tzatziki.
*I prefer a salad mix with this and added tomatoes.
