Slow cooker Pot Roast

A tasty and very easy pot roast. Often called three packet pot roast. My mother-in-law showed me and it’s been a staple when it’s cold ever since.
Ingredients
Beef chuck roast, 4 lbs
1 packer Italian seasoning, 1 packet ranch seasoning, 1 packet brown gravy mix
vegetables to your liking, I normally do potatoes, 1/2 white onion, and carrots
1 and 1/2 cup water
Directions
Sear your beef roast on a lightly oiled pan. Turn to high until hot, add oil, and let sear for 2 min per side. Place in crock pot. Then mix seasoning packets in 1 cup water and pour over meat. Add extra water to mostly come up side of meat but not cover. Depending on crockpot and timing needed, I suggest low for 4 hours and then add vegetables for another 2 to 3 hours. I prefer the packet of baby carrots that are clean. Also I prefer the mini potatoes in a packet as they are very tasty bite sized for this specific meal. You can always scrub and chop whole carrots and cube four or five russet potatoes. Chop onion leaving big chunks as they turn translucent in finished dish and are complimentary.
Break up meat with a fork into small chunks and place back in crockpot with juices for another 30 minutes, submerged in the juices
Some people add wine at the start. I think searing the meat and adding carrots are what make the finished dish extra tasty.
