Doug’s Spicy Smoked Red Chili

Doug is a brother from another mother. We have known him since we were all teenagers. Great guy that shared this killer chili recipe.
Ingredients
2 1/2 pounds of 93%\7%. 1 whole green pepper, red pepper, sweet onion. 5 cloves of garlic. Season meat by itself and veggies by themselves with chili powder, cayenne to taste, kosher salt, granulated garlic, onion powder, Mexican oregano, ground black pepper, cumin, smoked paprika.
Directions
I made the ground meat into the biggest flattest patty i could. Chop onion, red and green peppers to half inch size leave garlic whole. Put into a grill skillet and smoke for 45 minutes on 180 degrees. Flip the meat and stir the veggies. Smoke another 45 minutes. Took meat off. Turned smoker up to 375. Sauté veggies until translucent. Find garlic and finely chop before you put into the pot. Put meat and 2 cans of diced tomatoes, 1 can of black beans drained and rinsed, one can of kidney beans drained and rinsed. Added that to pot. Add two cups beef broth. I used beef broth from a prime rib I smoked prior and wife made stock out of it. Season and season with all spices again and again until you have great flavor. Don’t over salt. Simmer for and hour and half.
