Nancy’s Banana Bread

This recipe came from a wonderful lady that moved far away to the great shores of Florida. It’s tuna but we call it nuna.

Ingredients:

1/2 cup canola oil

1 cup sugar

2 eggs

1/2 tsp salt

1 tsp baking soda

2 cups flower

4 ripe bananas (the more ripe the better)

Optional: Add 1/2 to 3/4 cup walnuts

Directions:

Mix dry ingredients and then add wet. Do you want the mix to be wet throughout and immersed with all of the powder. Anything not mixed that is dry is going to look funky in the resulting product. Of course the other side of that coin is you want some bananna chunks and not entirely blended. You can add nuts if you like, we personally do not.

Bake 350 for 1 hour. You may need to grease the baking pan depending on what it’s made of. I tend to use 10 pounds from the store which are one time use. Those don’t need to be greased. I divided into smaller loaves for my feature pictures. That tends to reduce overall cooking time. At the bottom of this you see mini loaves which I really like because you can freeze and you later.

When putting into your baking pan only fill it halfway at most. Keep an eye on your bread and put a toothpick through the middle in a few spots to make sure it comes out clean or mostly clean when done. After taking out of oven, remove from baking dish and put on a wire rack to cool.

Tips: you can make bananas go ripe by putting into into a paper bag, shutting it, and leaving it out. That speeds up the process.
