Green eggs and ham

A classic for kids. Easy as anything but a fun treat to start early with children. So simple to do. The biggest thing is where to get a good ham to go with this.

Ingredients

2 eggs per person

1 thick slice of ham per person

green food coloring

Directions

This recipe calls for two sauté pans. Cut your ham to 1/4 to 1/2 inch cubes. I get my ham from Safeway where they have a ham they bake in the deli there. Ask for good thick slices. Sauté in pan with a little cooking oil. It’s done when the meat is browned lightly.

Crack the eggs. Add your preferred spices and 3 or so drops of green coloring. Keep adding the drops till you get the just past lime green color when the eggs are mixed. Usually that’s 4 for our family of 4. Scramble using your preferred method and plate up.
