Margaret’s Salsa

Making your own salsa is surprisingly easy. Very small number of ingredients. This was a special night for my kids. Their Abuela (vis abuela actually) showed them this recipe and had them help her make it.

Ingredients:

6-8 Japones chilies. I bought a small bag off the Internet and it’s gonna last me a few years. 1-2 cans low salt diced tomatoes. 1/4-1/2 cup finely chopped onions. Now Margaret does NOT include garlic however I know it can be required in some households.

Directions:

Mash and mix up the chilies. You want them to be finely almost ground with no large pieces. We use a molcajete.

Place into a bowl and start mashing in the tomatoes. Add the chili back in parts so it’s really well mixed with those tomatoes. Sometimes petite diced tomatoes in a can have the stem part which you have to pick out. Sometimes it doesn’t. Mash well continue to add to the bowl.

Add maybe a quarter cup of the onions. If you are doing a double size add more.

Add the other components you wish, chill and serve.
